Zucchini sticks with honey mustard mayo

Simply set your oven, prep a baking tray, slice and coat your zucchini, then bake until golden brown. Serve with your honey mustard – homemade, of course! – for a little sweet and tangy kick and then get dipping.

Ingredients

Cooking spray

All-purpose flour

Egg white(s)

Seasoned breadcrumbs

1 cup(s)

Uncooked zucchini

4 medium, ends trimmed, cut into twelve 1-inch sticks each

Fat free mayonnaise

6 Tbsp

Honey

1 Tbsp

Dijon mustard

1 Tbsp

Instructions

1. Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.

2. In a shallow dish, combine flour, salt and pepper; mix well with a fork to combine. Place egg whites and breadcrumbs in separate shallow dishes. Add zucchini to flour mixture; turn to coat. Next, add zucchini to egg whites; turn to coat. Last, add zucchini to breadcrumbs and turn to coat.

3. Place coated zucchini on prepared baking sheet in a single layer and coat with cooking spray; bake until golden brown, flipping once or twice, about 40 minutes.

4. Meanwhile, in a small bowl, whisk together mayonnaise, honey and mustard; serve with zucchini sticks. Yields about 6 sticks and 1 tablespoon dip per serving.
