Irish steel-cut oats with pomegranate and pistachios

Total Time:   10 min   Prep: 7 min  Cook:  3 min  Serves: 1
Difficulty: Easy

This one-serving bowl of filling fruit and nut-topped oatmeal ready in just 10 minutes, thanks to quick steel-cut oats. These quick oats are created similarly to regular steel-cut oats, but are simply cut into smaller pieces, which cuts their cooking time for up to 30 minutes down to 3 to 7 minutes. While pomegranate seeds and pistachios offer delightfully different flavor and texture combination in this breakfast, you can top this bowl with whatever ingredients you like, such as tried-and-true options like cinnamon, brown sugar, raisins, and fresh berries to dried cranberries or cherries or a dusting of nutmeg. Toasted slivered almonds, chopped walnuts, or pecan halves would also work well in this recipe.
