Egg and bacon breakfast slider

These breakfast sliders are perfectly portioned for morning sustenance on the go, but also make a great company-worthy brunch offering. Center-cut bacon is traditional pork bacon minus the fatty ends—or the lean center portions of bacon slices. You can also use turkey bacon here if you’d like. The low melting point of American cheese allows it to meld with the warm egg beautifully inside the pillowy bun. A dash of hot sauce here would add a bit of heat. Store leftover sliders in an airtight container in the refrigerator and reheat gently for a minute or so in the microwave or reheat in the oven.

Uncooked reduced fat center cut bacon

2 large, beaten

 

Low fat American cheese single(s)

Slider rolls

Instructions

1. Cook bacon in a medium nonstick skillet over medium heat until crisp, about 3 minutes; set on paper towels to drain.

2. Pour off fat from skillet; add beaten eggs and season to taste. Scramble eggs over medium heat; push to one side of pan and top with cheese. Cover skillet; cook over low heat until cheese melts. Lift eggs with spatula onto bun bottom; add bacon and bun top.

3. Makes 1 serving.
